The Greenhills Wagyu herd was founded in 1997 with the purchase of elite genetics from one of Japan’s leading Wagyu breeders Mr Shogo Takeda of Takeda Farms. Since its conception the herd has used a range of proven Full Blood genetics including Itozakura, Kedaka, Tajima, Tottori and Fujioshi.
Greenhills Wagyu now runs over 1,000 full blood females on two properties in New South Wales and is one of the largest full blood herds in Australia.
Greenhills, the property, is located at Exeter in the Southern Highlands and is the home to the elite females in the herd. Here animals are carefully monitored and performance recorded through BREEDPLAN to identify the best genetics that can be utilized through the larger commercial herd based at Caigan.
Caigan, located on the Castlereagh River in the Mendooran – Binnaway district, is over 4,000 hectares. Here large lines of cattle are bred for both the feedlot and the Asian export markets. The feedlot cattle are professionally fed for up to 600 days to produce an elite beef product of 7, 8 and 9 marble score for the restaurant trade.
Both properties are managed to achieve the highest standard in animal well fare and environmental sustainability.
Steers selected for the domestic and overseas markets are grass reared until they reach a suitable feedlot entry weight. These animals are then professionally fed for up to 600 days at fully accredited feedlots under the National Feedlot Accreditation Scheme.
The final product bound for specialist butchershops & restaurants is marketed internationally by Cabassi & co.
In 2010, 2011 and again in 2012, Cabassi & co entered Full Blood Wagyu beef (bred by Greenhills Wagyu) into the Sydney Royal Fine Food Show and on all three occasions was awarded the CLASS: S003 CHAMPION OPEN BEEF EXHIBIT (Class 3).
